When we made injera, we presented it on this platter, like in the restaurants we’ve been to. We don’t have a large enough pan to cook the injera on, so these are little versions of the injera. To give you an idea of the size, each one pancake is about the size of a dinner plate.
The teff is mixed with water and left out for several days to get that sourdough flavor. It’s strong by itself, but of course when mixed with the proper dishes, the distinction blends into an incredible force of tastiness.
