The most popular beach food I enjoyed in Belize was the coconut fudge. Sure, there was also lobster pizza, freshly harvested cashews, banana bread, pies of all kind, but the best thing was this fudge: hard or soft, with nuts or without, we enjoyed it. On the cayes of Belize adults make all kinds of treats, and kids walk around selling stuff to us tourists. I believe that the coconut fudge is really just strong coconut and sugar, cooked to various temperatures, but that doesn’t really matter. The simple things sometimes make all the difference in the world, no? I believe this is also known as tableta de coco in other countries, but as English is the predominant language, we would call this coconut fudge in Belize. Delicious.
