Cottage Cheese Crêpes

If you haven’t made crêpes before, you are missing out. I was, I know now. My friends in Portland introduced me to this great savory/sweet recipe for crêpes.

Mix together in a bowl a container of cottage cheese. Add several tablespoons (to taste) of lemon juice. Add nutmeg, black pepper and salt to the mixture. Grab a bunch of fresh chives, chopping them finely, and mix them into the cottage cheese filling.

Make your crepes, filling each one lightly with this mixture. You can roll these and put them in a casserole dish to serve all at once.

When you serve, add maple syrup on top. Amazing.
